A salad that celebrates the best of late summer.
There is something deeply satisfying about preparing a dish with ingredients at their very best. Late summer gives us an abundance that asks for very little: ripe nectarines, sun-warmed tomatoes, fragrant herbs and good olive oil. This is the kind of dish I come back to every year. It isn’t complicated, and that’s exactly the point: when the ingredients are full of flavour, our job is simply to bring them together.
Whether served as a light lunch, alongside grilled vegetables or as part of a table to share, this salad is a reminder that some of the best meals begin at the market.

Nectarine & Tomato Salad
Servings 4 portions
Ingredients
- 3 ripe nectarines
- 400 g mixed ripe tomatoes
- 1 handful fresh basil leaves
- 1 handful fresh mint leaves
- 2 tbsp roasted nuts of choice
Sauce
- 3 tbsp olive oil
- 2 tbsp lemon juice
- flaky sea salt
- freshly ground black pepper
Instructions
- Slice the nectarines into wedges and cut the tomatoes into generous pieces, keeping all their juices.
- Scatter over the basil and mint leaves, then add the toasted nuts.
- Whisk together the olive oil, lemon juice, salt and pepper and spoon it gently over the salad.
- Leave everything to sit for 20 minutes before serving. The juices from the tomatoes and nectarines mingle with the dressing to create something that is almost good enough to eat with a piece of bread alone.
