Did you know that… the colour of an eggshell does not tell you if an egg is better?


White, brown, blue or even green … eggs come in many colours. But the shell colour has very little to do with taste or quality.

The colour simply depends on the breed of the hen. Some hens naturally lay white eggs, others brown ones, and certain heritage breeds even produce blue or green shells.

What matters far more is:

💚 what the hens eat

💚 how they are raised

💚 access to outdoors

💚 how fresh the eggs are

Brown eggs are often seen as more “natural”, but this is mostly perception. In fact, once cracked open, white and brown eggs look almost identical.

Interestingly, yolk colour is influenced more by the hen’s diet than by the shell itself. Hens eating grasses, herbs and carotenoid-rich feed often produce darker yolks.

At Cibo & Vino, we love seeing different coloured eggs at the farmers’ market. It is a small reminder that food does not need to look perfectly uniform to be good.

Nature was never meant to be one colour only.
