Galette provençale

I based myself on the delicious galette from Falastin with beetroot and feta and turned it into a version à la provençale with chèvre and a lot of thyme as well as honey from the region.

A labour of love which is worth every minute of thought and work. To be made again  … maybe in a different version ..?
