Supplier spotlight: from lake to table, and field to fork


At Cibo & Vino, every dish tells a story — not just of flavour, but of the people, places, and values behind each ingredient. Today, I’m shining a light on two suppliers whose commitment to quality and sustainability makes them a perfect fit for our table.

First, Valdibella : their black lentils are nothing short of extraordinary — tiny, glossy, and packed with flavour. Every bite carries the richness of the Sicilian soil where they’re grown, and the ethos of a cooperative that puts biodiversity, organic farming, and fair work practices at its heart. Choosing Valdibella isn’t just about taste — it’s about supporting a food system that respects both people and the planet.

Then there’s a local organic grocery store – Zwibol – a quiet champion of regional produce. It was here that I found the beautiful Renke (whitefish) for this dish, caught in the clear waters of Lake Zürich. This is the kind of sourcing that matters to me — seasonal, traceable, and rooted in place. You can taste the freshness that comes from fish caught just a short journey away.

Together, these ingredients become more than a meal. They embody Cibo & Vino’s values: celebrating seasonal abundance, championing small producers, and creating dishes that connect us to the land and water around us.
