Christmas molasses cookies


As Christmas draws near and gatherings with friends gently fill the calendar, these crisp, easy-to-make molasses cookies become my go-to sweet treat. They strike the perfect balance: just sweet enough, wonderfully spiced, and equally at home beside a glass of bubbles, a cosy cup of tea or a bright, fresh clementine.

Shaped big or small, they even double as charming, edible table decorations … a little reminder that simplicity often brings the most joy in a busy season.

Molasses cookies

Crispy molasses cookies

Ingredients

  • 250 g molasses this can be any molasses you prefer
  • 250 g sugar raw sugar will increase the molasses taste as well as the baking time
  • 750 g white organic flour
  • 250 g butter
  • 1250 g ground almonds
  • 2 table spoons baking soda
  • 1 organic egg

Instructions

  • Heat the suger and molasses until the sugar has liquidised. Then let the mixture cool off completely before missing all the other ingredients into it.
  • Bake at low heat until the cookies are crispy. This will take about 20 mins.
