A citrus surprise: why the cedro is different from lemon or lime


Did you know that the cedro (citron) turns the usual citrus logic upside down? With lemons or limes we usually enjoy the fragrant zest and avoid the bitter white pith.

The cedro, one of the oldest citrus fruits, does exactly the opposite. Its thick white pith is mild, fragrant and completely edible, while the zest contains very intense oils and can taste surprisingly strong. Slice a cedro thinly and you’ll discover a gentle citrus aroma and a pleasant crunch. Quite a surprise if you expect something lemon-like.

In southern Italy, especially in Calabria, cedro has been enjoyed for centuries in the simplest way: thin slices dressed with good olive oil and a pinch of salt. It’s a lovely reminder that sometimes the most interesting flavours are found in the parts of an ingredient we usually overlook.
