Clementine and almond cake

I guess you can’t go more Mediterranean than with this beautiful clementine and almond cake.

It is my first experience with muscovado sugar and I like the way the smoky taste is an amazing contrast to the slightly bitter clementine and lemon pulp. The crunchy topping is the perfect contrast to the otherwise smooth texture.
